A Huge Flax Muffin
A HUGE FLAX MUFFIN . . . . A healthy gluten free muffin
No need to grease the mug. Place the following ingredients into a microwave safe huge mug
beginning with the oil. If you want, you can replace the honey with 12 drops of stevia.
1 tablespoon avocado oil
1 tablespoon soft honey
¼ teaspoon vanilla
1 tablespoon cocoa
1 tablespoon cinnamon
½ teaspoon ground ginger
pinch of salt
1 egg
¼ cup crushed flax
Mix these ingredients in a huge mug until well mixed.
First, put one of the following on top of batter:
1/4 cup chopped walnuts, sunflower seeds or slivered almonds
Next, one of these on top:
¼ cup dark chocolate chips, raisins, cranberries or chopped cherries
With the tip of a spoon mix the very top a tiny bit. Microwave 2 minutes in a smaller microwave or 1-2 minutes in a larger unit.
Remove from microwave and invert to a plate.
